Seafood Cioppino

During the holidays, I'm always looking for recipes that are quick and easy - and delicious.  This one pot seafood dish is a winner, and all you need is a salad and a fresh baked loaf of bread, and you're done.  There are many versions of Cioppino, but this one from goop is a really good one.  Follow below, or go to the website.  And, there of course, you will find other ideas for one pan dinners, during the Christmas and winter holiday period.  Enjoy!

3 tablespoons olive oil

1 medium yellow onion, finely-diced

1 medium fennel bulb, finely-diced

4 garlic cloves, minced

½ teaspoon fennel seeds

½ teaspoon dried oregano

1 large pinch red chili flakes

1 fresh bay leaf

1 cup white wine

1 28-ounce can chopped or crushed tomatoes

3 cups fish stock

¾ pound halibut, cut into 1-inch pieces

¾ pound clams, very well scrubbed and cleaned

½ pound large peeled shrimp

salt and pepper

pinch of sugar, optional

2 tablespoons chopped parsley

1. Heat olive oil in a 4 or 5 quart dutch oven over medium heat. Add onion and fennel and sauté until translucent and starting to brown, about 10 minutes.

2. Add garlic, fennel seeds, oregano, chili, and bay leaf, and sauté for another 3 minutes.

3. Add the white wine, turn the heat up to high, and cook 3-5 minutes or until the alcohol has cooked off and most of the liquid has evaporated.

4. Add crushed tomatoes and all of their juices to the pan along with a generous pinch of salt. Bring the mixture up to a boil, reduce to a simmer, then partially cover with the lid and simmer gently for 45 minutes.

5. Add the fish stock and continue simmering for at least 10-15 minutes.

6. Add clams, let them cook in the broth for 2 minutes, then add fish and shrimp, and cook 4-5 minutes more, or until clams are open and fish and shrimp are just cooked through.

7. Taste for seasoning and add salt, pepper, and a pinch of sugar, if desired. Garnish with chopped parsley and serve with warm bread on the side

It's not too early to be thinking about where your holiday donations may make the biggest difference.  There are many Vermonters who are in need.  One of the most gratifying traditions is giving to those who need assistance.

There are many ways to give back to our communities and neighbors.  The following organizations are in continual need of donations and additional support during the holidays, and throughout the year:

The Lamoille Family Center in Morrisville receives calls and visits from families experiencing crises, every day.  The nurturing staff educate and support families through home, and community services.  They are also always in need of volunteers.  You can drop off food, gift and gas cards, and find out about other ways you can help by going to their website.

The Lamoille Community Food Share in Morrisville provides food security around Lamoille County.  You can drop off food items, volunteer your time at the Food Share, or make a donation through their website.  You can also find them on Facebook.   If it's easier for you, we at Carlson Real Estate collect food items for the Food Share on an ongoing basis, so please feel free to drop off any of your healthy canned and boxed goods, and we'll be sure to get them there.

Clarina Howard Nichols Center works to end domestic and sexual violence in Lamoille County. Clarina provides advocacy programs, emergency shelter, support and direct services to survivors of domestic and sexual violence as well as community outreach programs to affect social change.  Learn how you can help.
